Organic Beef Stew with Yams ala Oliver

organic, easy beef stew

All I can say is YUM! And he likes it! Hey Oliver!

He even ate the onions, the potatoes, the carrots and the yams! The only thing he wasn't too keen on eating was the liquid... which is fine with me because that’s my favorite part!

Here's what we used....

INGREDIENTS {all organic except for the beef which is grass fed, antibiotic- and hormone-free}
  • 1 lb “pot roast”beef cut into bite sized pieces
  • 1 yellow onion, diced 
  • 1 red pepper, diced (small enough for little mouths if you are cooking for 3 and under)
  • 6 carrots, sliced (again, small)
  • 4 potatoes, diced (small)
  • 1 yam, diced (small)
  • 1 box of organic beef stock (32 oz) by Pacific Rim or something like that
  • 4 cloves garlic, peeled and ‘smashed’
  • 2T Herbs de Provençe
  • (diced mushrooms are a nice touch as well!)
METHOD
  • heat up a large pot with olive oil on high
  • brown the meat, after about 2 minutes add the herbs and cook until meat is done
  • add the onions, saute along with the beef
  • once the onions are almost done, add the garlic and cook for 1 more minute
  • add the box of beef stock along with the rest of the veggies
  • boil for about 30 minutes, then turn down heat to a medium and simmer for another 30 minutes. The stock should thicken. Add a little water if it reduces too much. Veggies should be tender to the fork.
  • Serve in a soup bowl with some fresh bread. YUM!

I made a second batch of this stew since the first was so incredible! The second batch turned out a bit more bland and I think that was because I forgot to add the garlic! However, this time I added quite a few diced mushrooms and those were so so good! The second batch also included extra potatoes, so I would have to compensate next time with more broth. If you use pre-made broth such as the kind from Pacific Rim or even Trader Joe’s, you wont have to season or salt this with anything other than the Herbs de Provençe since the broth comes pre-seasoned. If I were to do this again, I would be certain not to over cook the vegetables because they wither away to nothingness, and the stock seemingly disappears. So, if I were to try a THIRD time, I'd add a bit more stock (I like the liquid portion).
