Busy Day in the Kitchen!

You wont believe this. I hardly believe this. It's amazing what can be accomplished while Oliver sleeps. Aside from the normal clean up and laundry duties, I cooked up a storm yesterday AND today! I wish I had pix to show you, but alas, as soon as I get a new computer, I'll be able to upload pix much more easily.

We took Oliver to his 2-yr doctor appointment this past week. He is doing well. His lead levels are down to about 4 (4>µg/dL). At one year of age, they were up to almost 10. It was pretty scary for us. So that was a good report, since his lead levels have been coming down progressively ever since. In addition, the doctor said she thought he needed more vegetables, something Oliver does not love. He gets a lot of them in his juice actually, and he gets them disguised in his meals. But this weekend, I specifically made a few things that included (and hid) vegetables. Some of the list below was just for me and Matt. But all of them had veggies (except the treat).

Anyway, here's what I made:

  • Peruvian Chicken with Mushroom Rice Pilaf (last night for dinner. YUM!) Recipe
  • Nutella (yes! yes! yes! Homemade and healthy! OMG! This one I will share eventually. And if you stay on Santa's Nice list, you may find a little jar of this in your stocking next winter.) Recipe
  • Lentil and Cauliflower Soup with Chicken Sausage
  • Navy Bean Roll ups with Whole Wheat Tortillas
  • Garden Pancakes (ok, to be honest, these were a flop. OR rather, no matter how much jam I slathered onto them, I could not get Oliver to pop one in his mouth! I tried one too. Can't say I blame him.)
  • Vegetable Chili
  • Creamy Asparagus Soup Recipe
  • Creamy White Asparagus Soup


Not to mention we went on a trip to Whole Foods (just so Oliver could ride the escalator 10 more times) and Sendiks, then today went to the Home and Garden Show... which means Matt will be doing more yard construction this summer. :)

I'm stuffed and the house is clean. I think Oliver will sleep for about 30 more minutes so I'm going to take advantage and get a few moments of rest in too. Today we see Grandpa and Dotti (Oliver calls him Meeka ... not sure how or why that happened).... and hopefully we can squeeze in a park before heading down there. It's almost 50 degrees out. Practically summer!

Keep your fingers crossed that as soon as the iPad comes out on April 2nd, Apple will release their new Power Mac Notebooks. This old school G4 and CRT monitor are too slow for me!
