Tasty Turkey Time (part two!)

Next on the docket is Turkey Soup. YUM. Not the kind that you may be used to. It's a Southwestern soup, with a slight kick.

Here's what I'm talkin' about: (Oliver sized)

INGREDIENTS
  • 1 lb ground turkey (97% lean if you are watching your waistline)
  • 1 onion, diced or chopped
  • 1 can black beans
  • 1 red pepper, diced or chopped
  • 1 can diced tomatoes
  • 1 small can tomato sauce
  • 24 oz of chicken broth
  • corn (optional)
  • chopped cilantro (reserve some for a garnish as well)

GARNISH
  • freshly chopped cilantro
  • fresh avocado slices
  • fresh tomatoes
  • fresh green onions
  • low fat sour cream

METHOD
  1. sautee onions in a pan with olive oil about 3 minutes
  2. add red peppers and sautee until tender
  3. add canned tomatoes and stew for about 10 minutes
  4. meanwhile, brown the ground turkey in another pan, cooking thoroughly, season with a little cumin and salt
  5. add turkey, beans, corn and chicken stock to the tomato saute
  6. add seasonings to taste: cumin, coriander, salt, pepper and chili powder
  7. let cook for 30 minutes
  8. add chopped cilantro to the mix, cook another 5 minutes
  9. serve and garnish to your liking
