Healthy Apple Cinnamon Pancakes


These pancakes are o-so-delish! I used apple-apricot sauce for mine and both Oliver and I loved 'em! YUM!

INGREDIENTS {all organic}
  • cooking spray or butter
  • 1/2 cup apple, chopped
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp vegetable oil
  • 1/2 cup unsweetened applesauce
  • 1 cup buttermilk
  • 1/4 tsp table salt
  • 1/4 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 2 tsp baking powder
  • 2 tbsp sugar
  • 1 1/4 cup all-purpose flour

METHOD
  • Combine flour and all dry ingredients in a large bowl
  • Combine buttermilk and wet ingredients in a small bowl; whisk until smooth
  • Add buttermilk mixture to flour mixture; stir until smooth
  • Stir in apple
  • Spoon about 1⁄4 cup batter onto a hot nonstick griddle or nonstick skillet coated with cooking spray or butter
  • Turn pancakes when tops are covered with bubbles and edges look cooked.

YIELD 
10 small pancakes (oh so good!)

Melt apple jelly or fat-free caramel sauce for a deliciously sweet, nontraditional pancake topping. Or top w/warm apple sauce and apples.....or berries.......

  1. hi andrea! thanks so much for your comment and for sharing this recipe -- it looks SO good. i like that they're healthy too. the scallion pancakes i made are not so healthy at all! i don't have a real recipe for them (chinese cooking is not very exact, unfortunately). this recipe i found online looks pretty close to what i did (except when we make it at home we keep it simple and skip the whole yeast and rising thing): http://appetiteforchina.com/recipes/chinese-scallion-pancakes-photo-photo-recipe

  2. you know what, forget about that last recipe -- i was reading it more closely again and it's way more complicated than it needs to be. here's a much better one!

    but be sure to read the comments/reviews since some parts of the recipe are confusing. i've never made the dough with boiling water, so not sure what difference it makes. we also never add pepper and don't use sesame oil -- just canola or vegetable oil.
