Healthy Black Bean Soup

INGREDIENTS
16 oz bag of dried black beans
1 onion
1 red pepper
1 bunch cilantro (save a bit for a garnish)
1 can diced tomatoes
2 cloves garlic
1 lime (2T lime juice)
32 oz chicken broth or stock
cumin to taste
coriander to taste
salt to taste
sour cream, fresh cilantro, fresh tomatoes, red onion, bacon and avocado to garnish
DIRECTIONS
Cook beans per package directions. If you over cook them an extra 15 minutes, even better....so some beans will burst open and some will remain in tact.
Sauté onion in olive oil until 1/2 way cooked thru. Add tomatoes, sauteeing until you have a sofrito. Add diced red pepper and sauté for another 5 minutes or so. Add garlic. Sauté for just another minute. Add beans and chicken stock. Season with spices and add a bit of chopped cilantro (be sure to save the majority of the cilantro for after the soup is done!) Bring to a boil, then simmer for 30-45 minutes. Add more chopped cilantro and squeeze the entire lime into the soup. Simmer for another 10-15 minutes.
Garnish as desired and serve!
